We Know How To Have Our Cake and Eat It Too
2014 has arrived and with every new year it seems like everyone has a resolution to eat healthy and get fit. Now I am all for a healthy lifestyle but in all seriousness I don't think I could ever give up cake. And that is why here at The Boyfriend Shirt we have found a sneaky solution to having your cake and eating it too.
All you will need is:
1 whole watermelon (preferably seedless)
2 teaspoons of ground cinnamon
400 ml of whipping cream
Raw sliced almonds
Fresh mint leaves
A mix of berries
Now I am giving you fair warning, this involves cutting an entire watermelon which is both a very messy and dangerous job. So please watch out for your fingers!
The Boyfriend Shirt is lucky enough to have a very good friend who lives out in the Swan Valley and farms an abundance of beautiful fresh produce. If you're ever out in the valley, we strongly suggest pulling over and trying some of the delicious fruit stalls along the way. While you're there keep an eye out for Rullo Melons- the hero behind today's recipe.
First up the watermelon rind needs to be removed, begin by cutting off each end leaving the watermelon like a cylinder .
Tip the watermelon onto one of the freshly cut flat ends. Then slice away the remaining green rind. Once the watermelon flesh is left, pat the outside dry with a paper towel. This will make icing the cake much easier!
For this recipe we used fresh whipping cream, however if you are a true health nut you can substitute the cream with coconut cream for a 100% healthy option. Pour the cream into a large bowl and add the cinnamon. Slowly whip the cream into a thick consistency making sure the cinnamon is mixed through. Ice the watermelon with the cream making sure there is an even spread across the entire cake.
And now the fun begins. From here the world is your oyster and you can decorate the cake however your heart desires. We chose a mix of almonds, mint and berries and just sprinkled them all over. Finally, I challenge you to find someone who will not devour this treat in a few seconds! Gluten Free, healthy and amazingly delicious....the perfect cake in our eyes!
