Study Week Mug Cake

Sometimes cake is a need, not a want.

I don't know about you guys but during the beginning of study week I somehow miraculously find time to cook 3 course dinners or undertake complicated baking endeavours until suddenly I have an exam in three days and I dont have time to brush my hair, let alone bake something.

But back to the cake.

I am a fervent believer in chocolate curing all sorts of life issues and study week is a big life issue at the moment. This cake takes 5 minutes from pulling all the ingredients out to putting the cake in your mouth and is full of healthy and delicious things. I have used cacao powder in this recipe because it is ridiculously good for you but you can substitute it out for cocoa if that is all you have in the cupboard.

INGREDIENTS

1.5 tbsp cacao powder

3 tbsp gluten free plain flour

2 tbsp milk (I usually use soy, rice or coconut milk but we were all out)

2 tbsp agave syrup (can also use sugar/ ice malt syrup/ stevia....whatever you prefer)

3 tsp coconut oil

1/2 tsp vanilla paste

1/4 tsp baking powder

METHOD

1. Combine all dry ingredients and mix well

2. Add wet ingredients and stir until incorporated

3. Grease mug well 

4. Pour mix into mug and microwave on HIGH for 90 seconds

5. Turn out cake onto plate and enjoy
